Step 1: Season the Chicken.
In a bowl, mix the chicken thighs with paprika, onion powder, garlic powder, Italian seasoning, salt, and pepper.
Step 2: Sear the Chicken.
Heat some oil in an ovenproof pan or skillet over medium heat. Add the seasoned chicken and sear for about 5 minutes on each side until golden. Remove and set aside.
Step 3: Build the Sauce.
Spray the pan with a bit more oil, then add the crushed garlic, oregano, and a pinch of chili flakes if you like a little heat. Sauté for about a minute. Stir in the chicken stock, red pesto, sun-dried tomatoes, low-fat cream, and Parmesan. Mix until the sauce is smooth and begins to simmer.
Step 4: Finish in the Oven.
Return the chicken thighs to the pan, spooning some sauce over the top. Place the pan in a preheated oven and bake at 180°C (350°F) for about 15 minutes, or until the chicken is cooked through.
Step 5: Serve.
Spoon the creamy sauce over the chicken and serve with your favorite sides like mashed potatoes and steamed broccoli.
