Equipment

Ingredients
  

  • For the Chicken:
  • 4 chicken thigh fillets
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • For the Sauce:
  • 50 g diced chorizo
  • 1 tbsp red pesto
  • 40 g diced sun-dried tomatoes
  • 150 ml chicken stock
  • 50 ml low-fat cream
  • 30 g Parmesan cheese grated
  • 2 crushed garlic cloves
  • 1 tsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Step 1: Season the Chicken.
  • In a bowl, mix the chicken thighs with paprika, onion powder, garlic powder, Italian seasoning, salt, and pepper.
  • Step 2: Sear the Chicken.
  • Heat some oil in an ovenproof pan or skillet over medium heat. Add the seasoned chicken and sear for about 5 minutes on each side until golden. Remove and set aside.
  • Step 3: Build the Sauce.
  • Spray the pan with a bit more oil, then add the crushed garlic, oregano, and a pinch of chili flakes if you like a little heat. Sauté for about a minute. Stir in the chicken stock, red pesto, sun-dried tomatoes, low-fat cream, and Parmesan. Mix until the sauce is smooth and begins to simmer.
  • Step 4: Finish in the Oven.
  • Return the chicken thighs to the pan, spooning some sauce over the top. Place the pan in a preheated oven and bake at 180°C (350°F) for about 15 minutes, or until the chicken is cooked through.
  • Step 5: Serve.
  • Spoon the creamy sauce over the chicken and serve with your favorite sides like mashed potatoes and steamed broccoli.

Notes

  • Don’t Overcrowd the Pan: Sear the chicken in batches if needed to get an even golden crust.
  • Simmer Sauce Gently: Overheating cream can cause it to separate, so keep the heat low while building the sauce.
  • Check Chicken Temperature: Ensure the chicken reaches an internal temperature of 75°C (165°F) before serving.
