Ingredients
  

  • 1 diced onion
  • 1 diced red pepper
  • 2 tbsp tomato puree
  • 350 g diced chicken breast
  • 70 g chorizo sliced
  • 500 ml stock chicken or vegetable
  • 120 g uncooked rice
  • 3 crushed garlic cloves
  • 1 tbsp paprika
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • Fresh parsley for garnish

Instructions
 

  • Sauté the Base Ingredients
    Heat your pan over medium heat and add a little oil or spray oil.Add the diced onion, red pepper, and sliced chorizo. Fry for 3-4 minutes until the onion softens and the chorizo releases its flavorful oils.
  • Cook the Chicken and Garlic
    Add the diced chicken to the pan along with the garlic granules, paprika, and onion granules. Stir everything together and cook until the chicken starts to brown slightly on all sides, about 5 minutes.
  • Add the Rice and Stock
    Stir in the uncooked rice, letting it absorb some of the flavors for about a minute.Add the tomato puree and mix well.Pour in the stock, stir, and bring to a boil.
  • Simmer to Perfection
    Reduce the heat to low, cover the pan, and let the rice simmer for 15-20 minutes. Stir occasionally to prevent sticking.
  • Serve and Garnish
    Once the rice is tender and the liquid has been absorbed, stir in some fresh parsley.Serve hot with a side of steamed broccoli or your favorite greens.
