Equipment

  • Saucepan for boiling potatoes
  • Air fryer (or baking tray for oven use)
  • Large frying pan or skillet
  • Mixing bowl

Ingredients
  

  • 200 g diced potato
  • 2 sausages
  • 1 bacon medallion
  • 100 g mushrooms sliced
  • 1 small onion diced
  • 1 egg
  • ½ tsp onion granules
  • ½ tsp garlic powder
  • ½ tsp paprika

Instructions
 

  • Prep the Potatoes:
    Dice the potatoes into small cubes and boil them in salted water for about 5 minutes. This softens them slightly, so they cook perfectly crispy later.
    Drain the potatoes and toss them in a mixing bowl with onion granules, garlic powder, and paprika.
  • Crisp the Potatoes:
    Add the seasoned potatoes to your air fryer and cook at 190°C for 10–12 minutes until golden and crispy. If you don’t have an air fryer, spread them on a baking tray and bake in a preheated oven at 200°C for 15–20 minutes, flipping halfway through.
  • Cook the Meats and Veggies:
    While the potatoes are cooking, dice the sausages and bacon medallion into bite-sized pieces.
    Heat a frying pan over medium heat and cook the sausages and bacon until browned. Remove and set aside.
    In the same pan, sauté the mushrooms and diced onion until soft.
  • Combine Everything:
    Add the crispy potatoes, sausages, and bacon to the frying pan with the mushrooms and onions. Stir everything together and make a well in the center.
  • Cook the Egg:
    Crack the egg into the well in the middle of the pan. Cover with a lid and cook until the egg white is set but the yolk is still runny (or to your desired doneness).
  • Serve and Enjoy:
    Plate up your breakfast hash, sprinkle with a little extra paprika for garnish, and dig in!

Notes

  • Avoid over-boiling the potatoes: They should be slightly firm to prevent them from becoming mushy during air frying or baking.
  • Don’t overcrowd the pan: If the pan is too full, the ingredients won’t crisp up properly.
  • Cook the egg on low heat: This ensures the egg white cooks evenly without overcooking the yolk.
