Whether it’s a weekend treat or a quick weekday breakfast, this dish is perfect for keeping you energized. Plus, it’s all cooked in one pan (and an air fryer if you have one), which makes cleanup a breeze.

Method

Prep the Potatoes

To begin, dice the potatoes into small, even-sized cubes to ensure they cook uniformly. Bring a saucepan of salted water to a boil and add the diced potatoes. Let them simmer for about five minutes—this step is crucial, as it softens the potatoes just enough so they can achieve the perfect crispy texture later.
