Ingredients
  

  • 200 g oats
  • 50 g vanilla protein powder
  • 50 g lemon curd
  • 200 ml milk
  • 50 g frozen blueberries
  • 1 tsp baking powder
  • 2 mashed bananas
  • For Toppings:
  • 40 g white chocolate chips

Instructions
 

  • Step 1: Mash the Bananas. In a large mixing bowl, mash the bananas until smooth using a fork.
  • Step 2: Mix the Ingredients. Add the oats, protein powder, baking powder, blueberries, and lemon curd to the mashed bananas. Stir well until everything is evenly combined.
  • Step 3: Add the Milk. Pour in the milk and mix thoroughly to create a smooth, slightly thick batter.
  • Step 4: Prepare the Baking Dish. Spray the baking dish with oil or line it with greaseproof paper. Pour the oat mixture into the dish, spreading it out evenly.
  • Step 5: Add the Toppings. Sprinkle the white chocolate chips over the top of the mixture.
  • Step 6: Bake. Preheat your oven to 180°C (350°F). Bake the mixture for 20-25 minutes or until the top is golden brown and firm.
  • Step 7: Cool and Slice. Once baked, let the oatmeal bars cool slightly before cutting them into six even squares.

Notes

  • Use Ripe Bananas: Ripe bananas mash easily and add natural sweetness to the bars.
  • Don’t Overmix: Mix just until the ingredients are combined to avoid dense bars.
  • Check for Doneness: The bars are ready when the top is golden and a toothpick inserted in the center comes out clean.
