Equipment

  • Oven-proof dish
  • Mixing bowl
  • Whisk or fork
  • Blender (to blitz the oats)

Ingredients

  • 40 g blitzed oats
  • 100 ml any milk I use almond milk, but any works!
  • 0.5 tsp baking powder
  • 1 tsp cocoa powder
  • SF vanilla drops or a splash of vanilla extract
  • 70 g mashed banana
  • 29 g chocolate chips mix of milk and dark chocolate
  • 6 g chopped nuts walnuts work beautifully!

Instructions

  • Prepare the Batter
Blitz your oats in a blender to create a fine flour-like texture.
In a mixing bowl, combine the blitzed oats with mashed banana, baking powder, cocoa powder, SF vanilla drops, and milk.
Stir until the mixture is thick and well-combined—this consistency is key to a cake-like texture!
  • Add the Chocolate Chips and Nuts
Fold in most of the chocolate chips, leaving a few to sprinkle on top.
Pour the batter into an oven-proof dish and smooth it out.
  • Top and Bake
Sprinkle the remaining chocolate chips and the chopped nuts on top for a delightful crunch.
Bake in a preheated oven at 170°C (340°F) for 16 minutes, or until the top is set and slightly golden.

Notes

  • Banana Ripeness: Use a ripe banana for the best sweetness and texture.
  • Baking Time: Keep an eye on the oats—don’t overbake, as they can become too dry.
  • Mixing Tip: Ensure your batter is thick for that perfect cake-like texture.
