Step 1: Make the Batter.
In a large bowl, mix the self-raising flour, baking powder, and sweetener. Gradually whisk in the eggs and skimmed milk until the batter is smooth and lump-free.
Step 2: Cook the Pancakes.
Heat a frying pan over medium heat and spray it with low-calorie cooking spray. Pour a ladleful of batter into the pan and swirl it gently to form a small circle. Cook for 1-2 minutes until bubbles form on the surface, then flip and cook for another minute.
Step 3: Keep Pancakes Warm (Optional).
To keep your pancakes warm while cooking the rest, use a second frying pan on very low heat. Stack the cooked pancakes, placing the newest one at the bottom to avoid overcooking.
Step 4: Assemble the Taco Pancakes.
Fold each pancake into a taco shape and fill it with your favorite toppings. I love using sliced strawberries, crumbled Biscoff biscuits, mini Oreo cookies, and chocolate chips, but the options are endless!
