Equipment

  • Large mixing bowl
  • Whisk or electric mixer

  • Frying pan (non-stick is best)
  • Spatula
  • Small second frying pan (optional, for keeping pancakes warm)

Ingredients
  

  • For the Pancakes:
  • 200 g self-raising flour
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp sweetener or sugar, if you prefer
  • 200 ml skimmed milk
  • For Toppings:
  • Strawberries sliced
  • Biscoff biscuits crumbled
  • Mini Oreo cookies
  • Chocolate chips
  • Optional: Syrups whipped cream, or anything you love!

Instructions
 

  • Step 1: Make the Batter.
  • In a large bowl, mix the self-raising flour, baking powder, and sweetener. Gradually whisk in the eggs and skimmed milk until the batter is smooth and lump-free.
  • Step 2: Cook the Pancakes.
  • Heat a frying pan over medium heat and spray it with low-calorie cooking spray. Pour a ladleful of batter into the pan and swirl it gently to form a small circle. Cook for 1-2 minutes until bubbles form on the surface, then flip and cook for another minute.
  • Step 3: Keep Pancakes Warm (Optional).
  • To keep your pancakes warm while cooking the rest, use a second frying pan on very low heat. Stack the cooked pancakes, placing the newest one at the bottom to avoid overcooking.
  • Step 4: Assemble the Taco Pancakes.
  • Fold each pancake into a taco shape and fill it with your favorite toppings. I love using sliced strawberries, crumbled Biscoff biscuits, mini Oreo cookies, and chocolate chips, but the options are endless!

  • Mix Batter Until Smooth: Avoid overmixing, as this can make the pancakes dense.
