Ingredients
  

  • For the Chicken:
  • 500 g chicken breast or thigh fillets
  • 25 g flour
  • 1 egg whisked
  • 1 tbsp cornflour
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • For the Sauce:
  • 3 tbsp light brown sugar
  • 2 tbsp soy sauce
  • 100 ml orange juice freshly squeezed if possible
  • 2 tbsp rice vinegar
  • Pinch of chili flakes
  • 2 crushed garlic cloves
  • Pinch of crushed ginger
  • 1 tsp cornflour mixed with 2 tsp water

Instructions
 

  • Prep the Chicken.
    Cut the chicken into bite-sized pieces. In a bowl, mix the chicken pieces with the whisked egg. In another bowl, combine the flour, cornflour, black pepper, and garlic powder. Coat each chicken piece in the flour mixture.
  • Cook the Chicken.
    Heat a large frying pan or skillet over medium-high heat with a bit of oil. Add the chicken pieces, ensuring they don’t overcrowd the pan. Cook for about 10 minutes, turning occasionally, until golden brown on all sides. Set aside. (Pro tip: You can also air fry the chicken at 190°C for 12-15 minutes, turning halfway through.)
  • Make the Sauce.
    In a small saucepan, combine the light brown sugar, soy sauce, orange juice, rice vinegar, chili flakes, garlic, ginger, and the cornflour slurry. Heat over medium heat, stirring occasionally, until the sauce thickens and becomes sticky.
  • Combine Chicken and Sauce.
    Add the cooked chicken back to the frying pan, pour the sticky orange sauce over it, and toss until the chicken is well coated. Let it simmer for 2-3 minutes to meld the flavors.

Notes

  • Don’t Overcrowd the Pan: Cook the chicken in batches if needed to ensure it gets crispy.
  • Sauce Consistency: Keep stirring the sauce to prevent it from burning and ensure it thickens evenly.
  • Fresh Oranges: If you use freshly squeezed orange juice, the flavor will be even more vibrant!
