Equipment

  • Mixing bowls
  • Non-stick frying pan or deep pan
  • Wooden spoon or spatula
  • Knife and chopping board
  • Small saucepan (for sauce)

Ingredients

  • For the Honey Soy Sauce:
  • 5 tbsp honey
  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 crushed garlic cloves
  • Pinch of chili flakes
  • Pinch of sesame seeds
  • 1 tsp cornflour mixed with water
  • For the Chicken:
  • 350 g chicken breast cubed
  • 15 g cornflour
  • Crushed garlic cloves
  • Pinch of ginger
  • 1 diced onion
  • Handful of spring onions and coriander for garnish
  • For Serving:
  • Steamed rice or noodles
  • Optional veggies like broccoli, carrots, or snap peas

Instructions

  • Prepare the Honey Soy Sauce
In a small bowl, mix together honey, soy sauce, rice vinegar, sesame oil, crushed garlic, chili flakes, sesame seeds, and cornflour mixed with water.
Warm the mixture on the hob over medium heat, stirring occasionally until it thickens. Set aside.
  • Prep the Chicken
Toss the cubed chicken with cornflour, a pinch of salt, and pepper in a bowl to coat evenly.
Heat a deep pan with a little spray oil and fry the chicken over medium-high heat until golden and crispy on all sides.
  • Add the Veggies
Add the diced onion and garlic cloves to the pan with the chicken and cook until the onion softens.
Stir in half of the prepared sauce and mix well so the chicken is coated. Save the remaining sauce for drizzling over the finished dish.
  • Serve
Spoon the honey soy chicken over steamed rice or noodles.
Garnish with spring onions, fresh coriander, and an extra drizzle of the sauce.

Notes

  • Crispy Chicken: Ensure the chicken pieces are dry before coating them with cornflour to get a crispy finish.
  • Sauce Consistency: Stir the sauce continuously while heating to avoid clumps and ensure a smooth texture.
  • Even Cooking: Don’t overcrowd the pan when frying chicken to ensure all pieces cook evenly.
