  • 60 g cornflakes crushed
  • 1 whisked egg
  • 2 tbsp cornflour
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • For the Sauce:
  • 5 tbsp BBQ sauce
  • 3 tbsp honey
  • 2 tbsp water
  • 2 tbsp Frank’s Red Hot sauce
  • 1 tbsp tomato purée

Instructions
 

  • Step 1: Prep the Chicken.
  • Cut the chicken breasts into bite-sized pieces. In a bowl, coat the chicken with cornflour to ensure an even coating.
  • Step 2: Make the Seasoned Coating.
  • In a separate bowl, mix the crushed cornflakes with paprika, garlic powder, onion powder, salt, and pepper.
  • Step 3: Coat the Chicken.
  • Dip each chicken piece into the whisked egg, then into the cornflake mixture, ensuring it’s fully coated. Repeat until all the chicken is coated.
  • Step 4: Cook the Chicken.
  • Place the coated chicken in an air fryer and cook at 180°C (350°F) for 8 minutes. Flip the chicken pieces and cook for another 7-10 minutes until golden and crispy. If you’re using an oven, bake at the same temperature for 20-25 minutes, flipping halfway through.
  • Step 5: Prepare the Sauce.
  • While the chicken is cooking, combine the BBQ sauce, honey, water, hot sauce, and tomato purée in a small pan. Simmer over medium heat, stirring occasionally, until the sauce thickens and becomes sticky.
  • Step 6: Coat the Chicken.
  • Once the chicken is cooked, toss it in the warm honey BBQ sauce until evenly coated.
