Equipment

  • Two mixing bowls
  • Air fryer or oven
  • Kitchen mallet or rolling pin (to crush chips)
  • Whisk
  • Tongs or a fork

Ingredients
  

  • For the chicken:
  • 2 chicken breasts cut into strips
  • 20 g BBQ pop chips or any flavored chips
  • 1 tbsp paprika
  • 2 tsp chili powder
  • 2 tsp garlic granules
  • 2 tsp onion granules
  • 2 tsp Cajun seasoning
  • 1 egg whisked
  • For the wrap:
  • 2 tortillas I used Mission Wraps
  • 2 tbsp Philadelphia or cream cheese
  • 2 tbsp BBQ sauce
  • Lettuce leaves
  • Sliced onion

Instructions
 

  • Prepare the Chicken
    Crush the BBQ pop chips into very small crumbs. A rolling pin works great for this! Mix the crushed chips with paprika, chili powder, garlic granules, onion granules, and Cajun seasoning in a bowl.
    In a separate bowl, whisk the egg.
    Dip each chicken strip into the whisked egg, then coat it in the chip mixture. Make sure the chicken is fully covered.
  • Cook the Chicken
    Place the coated chicken strips in an air fryer and cook at 180°C (360°F) for 15 minutes. Flip halfway for even crispiness.
    No air fryer? You can bake them in a preheated oven at 200°C (400°F) for 20-25 minutes.
  • Assemble the Wraps
    Spread 1 tbsp of Philadelphia or cream cheese on each tortilla.
    Drizzle BBQ sauce over the cream cheese.
    Add lettuce and sliced onion for crunch and flavor.
    Place the crispy chicken strips on top and wrap tightly.

Notes

  • Chip Crumbs: Make sure the chips are crushed into fine crumbs to ensure even coating.
  • Cook Time: Always check your chicken is fully cooked—internal temperature should reach 75°C (165°F).
  • Wrap Folding: Warm the tortilla slightly before assembling to make it more pliable and easier to fold.
