Ingredients
  

  • For the Beef:
  • 250 g lean beef mince
  • 1 tbsp soy sauce
  • 2 crushed garlic cloves
  • 1/2 tsp ground ginger
  • 1/4 tsp white pepper
  • For the Fried Rice:
  • 240 g cooked rice day-old rice works best
  • 2 eggs whisked
  • 1 diced onion
  • 100 g frozen peas
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 tsp chili flakes optional
  • Optional Garnish:
  • Spring onions sliced
  • Sesame seeds

Instructions
 

  • Prepare the Beef.
    In a bowl, mix the beef mince with soy sauce, garlic, ground ginger, and white pepper. Set aside to marinate while you prepare the other ingredients.
  • Cook the Beef.
    Heat a frying pan or wok over medium-high heat with a splash of oil. Add the marinated beef and cook until browned and crispy. Remove the beef from the pan and set aside.
  • Scramble the Eggs.
    In the same pan, pour the whisked eggs and scramble them gently. Once cooked, push the eggs to one side of the pan.
  • Cook the Veggies.
    Add the diced onion and frozen peas to the pan. Stir-fry until the onion is softened and the peas are heated through.
  • Add the Rice.
    Add the cooked rice to the pan along with the soy sauce and sesame oil. Stir everything together, breaking up any clumps of rice. Cook for 2-3 minutes, letting the rice soak up the flavors.
  • Combine and Serve.
    Return the cooked beef to the pan and mix it in with the rice. Sprinkle with chili flakes for a bit of heat if desired. Divide the fried rice into bowls and garnish with spring onions and sesame seeds.

  • Use Day-Old Rice: Fresh rice can get mushy; chilled rice works best for fried rice recipes.
