Ingredients
  

  • For the Hash:
  • 120 g diced potato
  • 2 Heck chicken sausages
  • 50 g mushrooms sliced
  • 1/2 small onion diced
  • 50 g red pepper diced
  • For the Seasoning:
  • 1 tsp onion granules
  • 1 tsp garlic powder
  • 1 tsp paprika
  • For the Eggs:
  • 2 eggs

Instructions
 

  • Step 1: Prep the Potatoes. Dice the potatoes into small cubes and boil them in salted water for 5 minutes. Drain and sprinkle with onion granules, garlic powder, and paprika.
  • Step 2: Cook the Potatoes. Add the seasoned potatoes to the air fryer basket. Cook at 180°C (350°F) for 10-12 minutes, shaking halfway through, until they’re crispy.
  • Step 3: Add the Veggies and Sausages. Dice the chicken sausages, mushrooms, onion, and red pepper. Add these to the air fryer with the partially cooked potatoes and cook for another 8-10 minutes.
  • Step 4: Make the Scrambled Eggs. While the hash is finishing, whisk the eggs in a bowl. Heat a small frying pan over low-medium heat and scramble the eggs until creamy and fully cooked.
  • Step 5: Assemble and Serve. Once the hash is cooked, plate it up and top with the scrambled eggs. Enjoy warm!

Notes

  • Dice Potatoes Evenly: Cut the potatoes into similar-sized pieces to ensure they cook evenly in the air fryer.
  • Don’t Overcook the Eggs: Cook scrambled eggs on low heat and remove them from the pan while they’re still slightly soft, as they’ll continue cooking from residual heat.
  • Shake the Air Fryer Basket: Shake the basket halfway through cooking to ensure everything gets crispy and cooks evenly.
