Equipment

  • Small mixing bowl
  • Baking dish (single-serve size)
  • Whisk or fork
  • Oven

Ingredients
  

  • 2 crumpets
  • 1 egg
  • 50 ml milk any kind works!
  • Pinch of cinnamon
  • 1 tsp maple syrup
  • 1 tsp Biscoff spread
  • 1 square of Biscoff chocolate for topping

Instructions
 

  • Prepare the Crumpets
    Cut the crumpets into bite-sized pieces and set aside.
  • Make the Egg Mixture
    In a small bowl, whisk together the egg, milk, cinnamon, and maple syrup until well combined.
  • Soak the Crumpets
    Add the crumpet pieces to the egg mixture and stir gently to ensure they’re evenly coated. Let them soak for a minute.
  • Layer the Bake
    Grease or line a small baking dish. Add half of the soaked crumpet mixture.
    Place 1 tsp of Biscoff spread in the center of the dish.
    Add the remaining crumpet mixture on top, spreading it out evenly.
  • Bake
    Preheat your oven to 180°C (350°F).
    Bake the crumpet mixture for 15–20 minutes, or until golden and set.
  • Add the Chocolate
    Once out of the oven, top the bake with a square of Biscoff chocolate. Let it melt slightly before serving.

Notes

  • Soaking the Crumpets: Don’t oversoak, or the crumpets can become too mushy. A quick mix in the egg batter is enough.
  • Baking Time: Keep an eye on the bake during the last few minutes to ensure it doesn’t overcook and dry out.
