Prepare the CrumpetsCut the crumpets into bite-sized pieces and set aside.
Make the Egg MixtureIn a small bowl, whisk together the egg, milk, cinnamon, and maple syrup until well combined.
Soak the CrumpetsAdd the crumpet pieces to the egg mixture and stir gently to ensure they’re evenly coated. Let them soak for a minute.
Layer the BakeGrease or line a small baking dish. Add half of the soaked crumpet mixture.Place 1 tsp of Biscoff spread in the center of the dish.Add the remaining crumpet mixture on top, spreading it out evenly.
