Equipment

  • 2 mixing bowls (for egg and cornflake coating)
  • Plate (for chicken seasoning)
  • Air fryer or oven
  • Small saucepan (for sauce)
  • Tongs or a fork

Ingredients
  

  • For the Chicken:
  • 2 chicken breasts around 300g
  • 50 g cornflakes crushed finely
  • 1 whisked egg
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • For the Sauce:
  • 40 g BBQ sauce
  • 20 g ketchup
  • 1 tbsp honey
  • For Assembly:
  • 2 toasted buns
  • Lettuce leaves
  • 2 slices of cheese

Instructions
 

  • Step 1: Prepare the Chicken.
  • Place the chicken breasts on a plate and sprinkle them with half of the paprika, garlic powder, salt, and pepper.
  • Step 2: Set Up the Coating.
  • In one bowl, whisk the egg. In another bowl, mix the finely crushed cornflakes with the remaining paprika, garlic powder, salt, and pepper.
  • Step 3: Coat the Chicken.
  • Dip each chicken breast into the whisked egg, ensuring it’s fully coated. Then press it into the cornflake mixture, turning to coat all sides. Repeat for both chicken breasts.
  • Step 4: Cook the Chicken.
  • Place the coated chicken in an air fryer and cook at 180°C (350°F) for 15 minutes, or until golden and fully cooked (internal temperature of 75°C/165°F).
  • Step 5: Make the Sauce.
  • In a small saucepan, combine the BBQ sauce, ketchup, and honey. Warm over low heat, stirring occasionally.
  • Step 6: Combine Chicken and Sauce.
  • Once the chicken is cooked, dip or brush it with the warm BBQ sauce until fully coated.
  • Step 7: Assemble the Burgers.
  • Toast the buns and layer each one with lettuce, a piece of saucy chicken, and a slice of cheese. Serve immediately.

Notes

  • Crush Cornflakes Thoroughly: Finer crumbs stick better and create a more even coating.
  • Don’t Skip the Sauce Warm-Up: Heating the sauce helps it coat the chicken evenly and enhances the flavor.
  • Check Chicken Doneness: Use a meat thermometer to ensure the chicken is fully cooked at 75°C (165°F).
